This is an Algerian dish which is perfect for using up an oversupply of pumpkin, of which I have a lot at the moment! It can be served chunky, or pureed. (I like it chunky.) You could add some peas towards the end of the cooking time, or some chopped leafy greens. Serve with a green salad and some crusty bread for a complete meal. Tasty and easy!
1. In Thermomix (speed 7, 5 seconds) or food processor, chop until fine:
- 1 large clove garlic
- 1 medium onion
- 2 TBS fresh parsley
2. If using Thermomix, add and chop speed 5 for 3 secs:
- 1 stalk celery, quartered
- 1 carrot, quartered
3. Add and cook slowly until vegetables are tender (Thermomix: 15 mins, 100˚, reverse speed soft):
- 500g potatoes, chopped in 1 inch pieces
- 500g pumpkin, chopped in 1 inch pieces (or carrots or turnips or a mixture)
- chopped celery and carrot if not already added (see above)
- 2 TBS vegetable stock concentrate (or 2 tsp chicken/vege stock powder)
- 30g (2 TBS) olive oil or butter
- 50g water
- salt and pepper to taste
4. Serve as is, or puree and serve as side dish.
